Summer is coming. I know it didn’t really feel like it this past week but eventually it’s gonna happen. The gardens will bloom and backyard parties will be full swing before you know it. Years ago I used to work in a salad bar at a local grocery store and one of my favourite dishes was this cucumber salad with dill dressing.

It was so simple but delicious and refreshing. The salad bar used a store bought dressing, but here we make our own creamy dill dressing to pour over the cucumbers.

 

Cucumber Dill Salad

 

Cucumber Salad with Creamy Dill Dressing

  • 2 cucumbers
  • 1/2 red onion, thinly sliced
  • 1/2 cup plain Greek yoghurt
  • 1/2 cup fresh dill, finely chopped
  • 1 clove garlic, crushed
  • Juice of 1/2 lemon
  • 1/2 tsp sugar
  • Salt and Pepper

Peel each cucumber. You can either cut each cucumber in half lengthwise and slice into 1/4 inch slices or just cut them into 1/4 inch slices.

Slice the cucumbers

In a bowl, add the sliced cucumbers and red onions. Set aside. In a separate smaller bowl, add the Greek yoghurt, garlic, fresh dill, lemon juice, sugar and salt and pepper to taste.

Slice the red onions

Pour the dressing over the cucumbers and onions and mix thoroughly. Place in the refrigerator until ready to serve. Check the taste and add additional salt and pepper if needed.

Add the dill yoghurt dressing.

Serves 4 people as a side dish.
