There aren’t many things more enjoyable than a well made steamed Bao bun. Of course, if you add Robbie’s Gourmet Sausage, then yes, you’ve just upped it’s enjoyability.

We sat down with chef John Alvarez from F&B Walkerville who uses the Thai sausage from Robbie’s Gourmet Sausage Co. to give this recipe an added kick.

Steamed Bao Bun

  • 2 Bao Buns
  • 1 Robbie’s Gourmet Sausage Co Thai sausage cooked, butterflied and cut in half
  • Sambal aoili (see recipe below)
  • Cucumber salad (see recipe below)
  • Chopped peanuts
  • Fresh cilantro

Steam the Bao Buns. Add a smear of sambal aoli to the bun. Add half of Robbie’s Thai sausage. Dress with cucumber salad, and top with chopped peanuts and fresh cilantro.

Sambal Aoli

  • 1 cup mayo
  • 1/4 cup Sambal oelek
  • 2 PC Palm sugar
  • 1 cup lime juice
  • 4 tbsp fish sauce

Combine mayo and sambal. Add lime juice and fish sauce in a small sauce pan, bring to boil. Add palm sugar and stir until dissolved. Reduce by half and cool. Add to mayo.

Cucumber Salad

  • 1 seedless cucumber
  • 1 carrot
  • 1/4 sweet onion
  • 1 cup rice wine vinegar
  • 2 tsp white sugar

Thinly slice vegetables and put in a large bowl. Heat rice vinegar and sugar together until dissolved. Add to vegetables and mix. Let cool.
