In case you missed it, on Thursday, March 27, 2008, Three…A Tasting Bar, in collaboration with Aleksander Estate Winery, held its first Wild Game Dinner Night. While the event was a huge success, the menu was kept secret until served to the tables. Well, here is the amazing menu that Chef Vince Galema prepared for that evening, along with the perfect pairings from Alexanders Estates Winerys’ Izabela Bemben:

Course One
duck liver pate, pacific salmon gravlox, poached quail egg, venison carpaccio…all on crostinis – Sparkling wine

Course Two
stewed venison soup with ravioli two ways stuffed with lamb and duck – Shiraz 2006

Course Three
seared pheasant and poached pear salad with warm Gorgonzola bechamel sauce – Late Autumn Riesling

Course Four
green tea smoked salmon green tea and white balsamic vinegar, and wild boar wrapped asparagus with balsamic glaze – Chambourcin

Course Five
stewed rabbit with artichoke and tomato confit – Chardonnay (unoaked)

Course Six
moose calf tips with porcini mushroom and black peppercorn sauce – Cabernet Sauvignon

Course Seven
seared squab with roasted wild boar and swiss cheese with apple calvados demi-glaze slow roasted buffalo striploin with carmelized onion and blackberry peppercorn sauce – Baco Noir

Dessert
speculaas (ginger cake) with pumpkin ice cream – Peach
