Jillian and I were in a cooking mood today and decided to make chicken rogan josh. At one point the recipe called for roasted bell peppers and to get them from a jar. Well, we had bell peppers in our fridge and we had olive oil so I decided to show Jill how easy (and ridiculously good smelling) roasting your own peppers can be. Here are the steps:
- Get peppers
- Preheat your ovens broiler
- Brush each pepper with olive oil. Make sure you get each and every crack
- Put the peppers on a baking sheet
- Place the sheet with the peppers into the oven
- When the peppers start turning black on top, turn them over
- When the second side of the peppers start turning black, remove them from the oven
- Throw the peppers into a bowl and quickly cover the bowl air tight with plastic wrap. The steam trapped inside will held loosen all the skin on the peppers
- Once the peppers are cooled down and you’re able to touch them (15 minutes maybe), pull off the stems. The stems, and most of the seeds, should easily come out
- Hold the pepper down on a flat surface and start peeling. The skin should come off pretty easy
- Once the skin is removed, cut open the pepper and brush off any remaining seeds and pulp
- Enjoy the roasted peppers as you please
