Per Bacco Ristorante will be hosting it’s 2nd Wine Maker’s Dinner on Thursday January 21, 2010, as part of the 2010 Winter Bites celebration. This culinary ‘Tour of Italy’ will feature a 6 course dinner with exclusive Italian wine pairings.

Chef Dominic DiBartolomeo will prepare regional Italian dishes to complement the diversity of each wine’s terrior. Chef will be on hand to highlight the features of each course and wine expert Gus Bressan will provide insight on the characteristics of each wine pairing.

1st Course
Spicy radicchio and jickima slaw dressed with tuorlo puree over smoked salmon and roasted beets.
Wine Selection: Pinot Grigio – Region: Puglia

2nd Course
Spinach and balsamic salad topped with prosciutto wrapped quail, pine nuts and Grana Podano cheese.
Wine Selection: Bardolino – Region: Veneto

3rd Course
Poached egg nestled on onion and potato rosti with marinated figs and red wine jus.
Wine Selection: Dolcetto – Region: Piedmonte

4th Course
Spaghetti Bolognese made with tender veal cutlet and pork sausage in a herbed red wine tomato sauce.
Wine Selection: Chianti Classico – Region: Tuscany

5th Course
Osso Bucco with creamed swiss chard garnished with gremalade and rhubarb compote.
Wine Selection: Barolo – Region: Piedmonte

6th Course
Chocolate semi freddo with cinnamon walnut cream and sabayon
