Chef Aaron has always put his heart and soul into every dish he cooks. His egg nog is no different. The Oxley Estate Winery chef has perfected an egg nog that involves a process that takes approximately 3 weeks before it’s ready to serve.

While he won’t divulge his secrets, we did discover some things: the ingredients include bourbon, spiced rum and brandy as well as some grated nutmeg over top. Also, with such a long process to create this creamy, smooth drink, chef Aaron starts off by making 30 litres. As customers order and he starts to see his supply starting to dwindle, he goes about starting another 3 week process to make more.

In fact, another secret we discovered about this egg nog is that, in a manner very similar to start dough for bakers, Chef Aaron puts aside some from each batch to help start the next years nog.
