While the temperature has definitely risen in the last few days, the nights are still a little chilly. Our friends at Hummazing were kind enough to provide us with this easy recipe for lentil soup to keep us warm when the sun goes down.
- 4 cups orange lentils
- 2 tbsp extra virgin olive oil
- 1 tbsp salt
- 1 tps pepper and cumin
- two med. diced white onions
- 1 shredded carrot
- 1 bunch chopped green onions
- handful chopped Italian curly parsley
- 8 cups water
Boil at 280 degrees or until the lentils split. Then, simmer at 180 degrees for 10 mins.
