Another edition of the Wine Maker’s Dinner hosted by Per Bacco Ristorante is upon us.

On Thursday, April 22, 2010 (Earth Day), Per Bacco will host a 6-course dinner with exclusive wine pairings from Sprucewood Shores Estate Winery for only $65 per person.

Here is a look at the menu for the evening:

First course
Season seared & panko crusted Halibut with a white cannellini bean puree and accented with a grapefruit & basil beurre blanc sauce.

Perfectly paired with the light buttery & honey flavors of a Sprucewood Pinot Gris.

Second course
Cherry wood smoked and grilled pork tenderloin medallions with an apple brandy jus and flanked with an apricot mousse.

Paired with the light refreshing notes of an Sprucewood 2009 Chardonnay

Third course
Scallion pesto and escargot risotto finished with cream and pecorino cheese.

Perfectly paired with the introduction of the 2009 fruit forwarded notes of a Sprucewood Riesling

Pallet cleanser
Watermelon and cranberry granité.

Fourth course
Fleur De Sel & Peppercorn crusted Beef Carpaccio with cherry vinaigrette, fresh baby greens and shaved parmesan.

Perfectly paired with the aromatics of cherry & strawberry in the 2009 Sprucewood Meritage

Fifth course
Peppercorn & cocoa crusted beef tenderloin With sautéed and creamed swiss chard, roasted potatoes and blackberry jus.

Accompanied by the rich full bodied flavor of Sprucewood 2009 Cabernet Sauvignon

Desert
Vanilla cinnamon & pear Panacotta with strawberry compote and accented by rosewater & lycheé syrup.

Paired with the strawberry and floral notes of Sprucewood 08 Rosé
