If you’re looking to serve a little something different at the holiday table this year, The Butcher of Kingsville has a few interesting suggestions.
Venison and Bison
Serve a venison rack or venison striploin roast! This grassfed Quebec Red Deer is delicate & beautiful with a gentle sweetness. Or try grassfed Quebec bison striploin roast. It is big & beefy with a rich flavour.
Fresh, Ontario rabbit is something you normally don’t see on the holiday table. The shop has a brown butter and sage stuffing or a apple, cranberry and pecan stuffing that would make a delicious side.
Leg of Lamb
Local lamb that is mild and tender. Choose bone in or a boneless option. All cuts of lamb are available including Frenched rack of lamb and lamb shoulder roast.
This prime rib has been dry aged a minimum of 40 days for super flavourful & tender meat. It’s local, hormone and antibiotic free. The Butcher of Kingsville suggestions 1 bone for every 2 people. If you’re not into prime rib, they also have tenderloin, strip loin, brisket and chuck roasts.
Crown Roast of Pork or Lamb
If you’re looking to up that wow factor at the dinner table a crown roast will do it for you. A beautiful presentation and easy to portion out. The pork is Berkshire, a heritage breed that is locally and pasture raised. The lamb is mild and tender and also locally raised. The size can be made according to the number of people being served.
Keep it Traditional
Maybe you just want to keep it traditional. Fresh, locally raised turkeys are available. You have the option of organic certified or free range. You can even make it easy on yourself and get the stuffing. If you’re not interested in the entire bird, you can also just get the piece you’re interested in. They offer, breasts, legs, wings, spatchcocked and stuffed. Organic Free Range, Fresh Ontario Turkey are still available for orders and will be available for pick up as of Thursd Dec. 21-Dec 24th (9-12pm).
HINT: How large of a bird do you need? Take the number of people x 1.3 lbs
Fresh and smoked hams are available too. The fresh ham is uncooked and makes a great roast that can be stuffed or marinated (bone in or boneless). The smoked ham is fully cooked and all you need to do is heat it (bone in spiral ham with glaze or boneless).
