So I organized a bake sale at work to help raise funds for our United Way campaign. My lack of baking skills are no secret so the hunt was on for an easy recipe. Being the campaign coordinator for my entire place of work AND the organizer of the bake sale, there was a little pressure to come up with something good.

Enter No Bake Chocolate Oatmeal Cookies. No Bake, Chocolate and Cookies all in the same sentence pretty much sealed the deal.

No-Bake Chocolate Oatmeal Cookies
from Ezra Pound Cake

1/2 cup butter
2 cups sugar
1/2 cup milk
4 tablespoons cocoa
1/2 cup peanut butter
3 to 3 1/2 cups dry quick-cooking oats
2 teaspoons vanilla

Add the first four ingredients into a 4-quart saucepan. Bring to a rolling boil and hold for 1 minute. Remove from heat. Stir in the next 3 ingredients and drop by tablespoons onto wax paper. Let cool until set.

These were soooooo gooooooood. Very easy to make and were a hit at the bake sale. I also made peanut butter cookies which I’ll post later.
