Happy National Waffle Day! Seems like every food has their day and the waffle is no exception, so to celebrate this delicious day, I wanted to share one of my favourite recipes. Since buying a waffle maker a few months back, I’ve been on a kind of waffle makin’ binge. It started off with just plain old waffles, but lately we’ve been stepping it up a notch.

There are so many flavour combos that would be great in waffle format it makes my head spin. These are more on the savory side. The chives are starting to spring out of the ground and I wanted to take advantage of that fresh flavour. Adding bacon…well…that was a no brainer. We always have smoked bacon from The Butcher of Kingsville on hand  and it just seemed like the natural thing to do to add it to the mix.

Bacon and Chive Waffle

Bacon and Chive Waffles

  • 1 cup flour
  • 1/4 cup cornstarch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 salt
  • 1 tbsp sugar
  • 1 cup whole milk
  • 1 egg
  • 1 tsp vanilla
  • 1/3 cup chopped chives
  • 4 slices of cooked smoked bacon, chopped

Add dry ingredients to bowl and mix together. Add the milk, egg, vanilla chives and bacon and mix well. Set the mix aside for 30 minutes. Spoon the batter onto the waffle maker. Don’t overfill it or it will spill out the sides.

Cook the batter according to your waffle maker’s instructions.  Eat them on their own or pour a bit of maple syrup over top.

Makes 8 small or 2 large waffles.
