Frittata

After all the Christmas excitement, it’s nice to cook up an easy, quick and delicious meal like a frittata. Choose quality ingredients like free range eggs and you can even use up left over Christmas ham. I’ve broken this recipe up to serve one but you can adjust it according to how many people you are making it for. I find it makes it easier to use a non-stick pan.

  • 1 tbsp, olive oil
  • 2 small-medium potatoes
  • 2 green onions or 1/2 small onion chopped
  • 1 garlic clove, crushed
  • 2 free range eggs, beaten
  • salt and pepper
  • chopped parsley
  • Additional:
    • 1/2 tsp smoked paprika
    • 2 bacon slices chopped

To Cook: Heat the oil in the non-stick pan and cook the potatoes until golden brown. Add the onion and bacon until golden, then add garlic. When the mixture is cooked add the smoked paprika, and stir. If you don’t have smoked paprika, you can use sweet paprika. However, I feel everyone should have smoked paprika in their pantry, it adds tonnes of flavour to any dish you make.

In a bowl beat the eggs, add the parsley and seasoning. Pour the eggs evenly over the potato mixture and allow the eggs to cook on the base. Take a plate and place over the pan and carefully turn the frittata then slide back into the pan to cook the other side. Cut into wedges and serve!

Note: you can add other ingredients to the frittata. Instead of parsely, try chives. Or try chirizo, ham, mushrooms or whatever is available. I like to eat mine with sweet chili sauce or sometimes I like to add light cream cheese just before I flip it to cook the other side.
