30 Days of Local Wine – Day Thirteen: Sprucewood Shores Estate Winery, 2007 Late Harvest Riesling Traminer Vidal

Sprucewood Shores Estate Winery‘s Late Harvest Riesling Traminer Vidal (now that was a mouthful!) was crafted with the finest Vidal and Riesling grapes picked in late November 2007. This exceptional wine is bouncing with lychee, pear and apricot flavours, and finishes soft and sweet! Pair this at your next dinner party with cheesecake or vanilla ice cream and fruit.

“It is sweet, but not nearly as sweet as ice wine or other “Late Harvest Vidal” wines. This wine is perfect for after dinner” states Gary Killops of EssexWineReview.com.

“Pear flavours dominate this wine. It’s smooth and has an enjoyable finish that stays around for a while.”

This wine also comes in handy when creating in the kitchen, as showcased in this Late Harvest Lavender Jam recipe:

  • 1/4 cup dried lavender leaves
  • 2-1/2 cups water
  • 4-1/2 cups granulated white sugar
  • 1/4 cup Sprucewood Shores Late Harvest Reisling
  • 2 drops blue food coloring
  • 1 drop red food coloring
  • 1/2 bottle (or 1 packet) liquid pectin

Preparation:
Bring water to a boil in a medium saucepan. Stir in lavender leaves, remove from heat, and let steep for 15 minutes.

Pour mixture through a fine-mesh strainer or a layer of cheesecloth, reserving the liquid. Measure 2 cups of the liquid and return to the saucepan.

Return to the stove and stir in sugar, white wine, and food coloring. Bring to a rolling boil, stirring constantly. Add pectin, return to a full boil, and continue boiling for 1 minute, stirring constantly. Remove from heat and skim off foam.

Ladle lavender jelly into sterilized jars to within 1/2 inch of the top. Wipe tops of jars and screw on sterilized lids. Process in a boiling water bath according to your canner’s instructions.

Yield: about 3 half-pints
