Love is in the air! Everyone’s busy making last minute reservations for Valentine’s Day and planning how to make the day special for that one they love.

It’s been quite some time since I’ve made these cute meringue kisses but I needed a quick Valentine treat and this is an easy go to recipe. These little bites of meringue are light, crispy and melt in your mouth.

Of course, they are delicious eaten on their own, but since I had a jar of Nutella I decided to add a dollop in the middle for a Nutella meringue sandwich. That’s just how I roll.

Meringue Kisses

  • Egg whites from 5 eggs
  • Pinch of salt
  • Vanilla
  • 1 ½ cups superfine sugar
  • Red food colouring (optional)

Preheat oven to 200F. Line a baking sheet with parchment paper.

Beat the egg whites until foamy. Add the salt, and vanilla and continue beating. Add the sugar 1 teaspoon at a time. When all the sugar has been added, beat an additional 5-6 minutes. The egg whites should be very stiff, glossy, and smooth.

Add the food colouring until you get the shade you’re looking for. Fold gently into the meringue. Do not over-mix or the meringue will lose it’s shape.

Spoon the mixture into a large pastry bag fitted with a 1/2-inch star tip. I use a large glass to hold the piping bag. It helps minimize the mess.

Pipe out the meringue onto a baking sheet lined with parchment paper, leaving 1/2 – 1 inch space between each “kiss”.

Bake for approximately 1 to one and half hours, until the meringues are dry to the touch and can be lifted from the foil. Cool completely before storing in a cool dry place.
