Pistachio Chocolate Biscotti

Tonight on our CTV News segment with Arms Bumanlag, Kyle Bondy of Anchor Coffee House showed us how to brew a coffee via Chemex. What’s that you say? Coffee on such a hot day? Of course! Studies actually show that drinking a hot beverage can actually cool your body better.

Along with a great cup of coffee, Kyle provided us with a Pistachio Biscotti recipe that would pair well with it:

Pistachio Biscotti

  • 1/4 cup olive oil
  • 3/4 cup sugar
  • 2 tsp vanilla extract
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 1 cup chopped pistachios
  • 1/4 cup dark chocolate, melted

Beat oil and sugar until well blended. Mix in vanilla and eggs. Stir in flour, salt & baking powder. Mix in pistachios. Form into 2 logs on baking sheet lined with parchment paper (dough will be sticky). Bake 35 mins at 300 F. Remove from oven, set aside to cool for 10 mins. Cut into slices. Lay on sides and bake another 10 mins.

Drizzle with melted chocolate when cool.
