Today on our CTV Windsor segment with Arms Bumanlag, we had special guest Chef Patrick McClary of Caesars Windsor teach us how to make a simple, yet tasty, chicken skewer and a couple sauces that would go along with them.

BBQ chicken Skewers
Served with Pineapple & Basil Salsa

  • 28 oz. (4 breasts) Chicken Breast, Boneless and Skinless
  • 1 ¼ cups (315ml) Chef Patrick’s Hickory BBQ Sauce
  1. Cut the chicken breast into 5 strips
  2. Place onto wooden skewers that have been soaked in water overnight
  3. Pour BBQ sauce over chicken and let stand for 3-24 hours
  4. Pre heat BBQ on high heat (ensure the grill is cleaned and seasoned with canola oil)
  5. Cook for approximately 4 minutes on each side or until fully cooked
  6. Place on platter and serve with the pineapple Salsa

 

Pineapple Salsa
(Prepare a day prior to serving)

  • 2 cup (500ml) Pineapple, small dice
  • ¼ cup (65ml) Green Onions, sliced
  • ¼ cup (65ml) Red Pepper, small dice
  • 1 tsp. (5ml) Ginger Grated
  • 2 tsp. (10ml) Lime Juice
  • 2 tbsp. (30ml) Rice Vinegar
  • 2 tbsp. (30ml) Pineapple or Orange Juice
  • 2 tbsp. (30ml) Sugar
  • 2 tbsp. (30ml) Fresh Basil, chopped
  • .5 tsp. (2.5ml) Chili Flakes
  1. Combine all ingredients except the basil and sugar
  2. Place in the refrigerator overnight
  3. Drain the liquid and place it in a sauce pan
  4. Add the sugar and simmer for 10 minutes
  5. Pour over the Pineapple, onions red pepper and ginger
  6. Let cool at room temperature
  7. Refrigerate until needed
  8. Stir in the fresh basil prior to serving

 

Just in case you wanted more than the Pineapple Sale, here is another sauce that would work well.

Blue Cheese and Buttermilk Dip
Yield 2.5 cups

  • 1¼ cups (310ml) Buttermilk
  • ¾ cup (200ml) Mayonnaise
  • 2 cloves Garlic, minced
  • 1 tsp. (5ml) Sugar
  • 1tbsp. (15ml) Dill, chopped
  • ½ tsp. (2.5ml) Dry mustard
  • To Taste Black pepper
  • 2 tbsp. (30ml) Parsley, chopped
  • 1 tsp. (5ml) Dijon Mustard
  • 1/3 cup (85ml) Blue Cheese, crumbled
  • ½ tsp. (2.5ml) Worcestershire Sauce
  • 4 drops Tabasco Sauce

Combine all ingredients and blend well. This could be prepared in a food processor, which would create a very smooth dip.
