Wellington Dark Ale Battered Onion Rings

If you follow us on Facebook, you may have already heard about the beer battered onion rings I made that I absolutely raved about. Well, here’s the recipe!

You will need the following:

  • 2 large onions
  • 3 cups of beer
  • 1 cup pastry/cake flour
  • 3 tbsp baking powder
  • 2 cups of cornstarch
  • Salt
  • Pepper

You can use any type of onions you like, Jill and I used a mix of 1 Sweet Spanish onion and 1 White onion. Slice them to whatever thickness you desire and separate the rings.

You would preferably need to use a deep fryer, however, since we don’t own one, we filled a wok with canola oil and heated it.

In a mixing bowl, throw together the flour, cornstarch, baking soda and then your desired amount of salt and pepper. Turn on your mixer and start to slowly pour in the beer. We added an Ontario twist and used Wellington Brewery Dark Ale. This mixture will create the batter.

Next, all you have to do is dip the sliced onions and immediately place them in the oil.

The flavour on our onion rings were intense and had an awesome crispiness to them. Top notch!
