Making a Quiche from scratch is easier than you may think. In fact, it was so easy, I may start a run for the ‘Queen of Quiche’ title around here.
The crust is very simple but delivered on taste. Mix 1 cup of flour with ½ tsp of salt. In a separate bowl, mix ¼ cup of olive oil with ¼ cup of cold water, mix together with a fork.
Combine the wet and dry ingredients and mix together until it forms a ball of dough.
Roll out into a 9” pie dish.
For the Quiche mix, melt 2 tbsp of butter in a large sauce pan and add one minced onion, 1 tsp of minced garlic, 2 cups of broccoli and cook slowly until onions are soft.
Pour the vegetable mixture into the crust .
Spread 1 ½ C of grated mozzarella cheese over top of the vegetables. In a separate bowl, combine 4 well beaten eggs and 1 ½ cups of skim milk, whisk together and pour over top of quiche.
Bake for 30 minutes at 350, or until the eggs have cooked and the Quiche is firm.
